Except that taking a chunk out of the moon completely fucks up earth's ecology and without a HUGE effort we won't be able to recover from it e.g. asides from the current stuff like bad tides it wont be a stable orbit any more and we cant live without the moon. So you'd only do it for the hell of it if you were insane or sure you could survive that.
...hmm. Any obvious self-sustaining space stations around? Or aliens who could exist on a destroyed earth?
